Thyme 2 Dine Streatery

This food truck recently moved from Florida to the Plaza de los Food Trucks behind the Gosling Express. We've been there a couple of times.

The specialty of the truck is lobster. They have Connecticut (warm) and Manhattan (cold) versions of the lobster roll, a Big Texan with lots of extra lobster, and lobster mac and cheese. I've gotten the medium lobster roll and the lobster mac and cheese.

The medium roll is a nice portion on a toasted bun with a dill pickle. The lobster I got was fresh and tasty, chewy as lobster should be but still tender. Beautiful flavor, they do not mess it up. The lobster mac and cheese is fine, not so much lobster but the client didn't mind that.

They have an option to upgrade from chips to fresh-cut fries, which I did, but you should do that being aware that it's not possible to make fresh potatoes crisp on the first fry (maybe if you thoroughly burn them, I guess). Places that make great fries, from McDonalds to fancy restaurants, cook them twice. They must be frozen in between and cooked from frozen to have a crisp exterior and tender interior. I don't mind limp and greasy fries (it's a nostalgia thing), so I went for them.

Lobster is pricey stuff, the lobster rolls are market price and that evening for a medium that was $34. The truck has other items at a variety of price points, including crawfish, burgers, and a split beef hot dog for $9. Service is enthusiastic. Hope they do well.
