Tacqueria la Incomparable has been expanding its presence in the area recently. They opened a new food truck at this location (a different truck, originally on Highway 6, had been here for a couple of years). It's housed in a converted school bus. I stopped in the other day to see if it had improved.
Overall I would say yes, it has. The new truck does not do trompo, but it does have a broader menu. I got a carnitas torta, nopales asado as a side, and a jamaica agua fresca.The torta is done like a panini, in a sandwich press. The carnitas meat was flavorful and tender. There were a few crispy bits that could be bacon, or perhaps bark on a slow-cooked pork shoulder. Either way they added a nice texture to the sandwich.
I have always been curious about nopales asados, and finally decided to give them a try. The server, in a very friendly way, made sure that an obvious gringo like me knew what I was ordering (prickly pear cactus, to white folks). The grilled onions were very tasty and I added them to the sandwich. The nopales had that classic sour-sharp flavor but were not overpowering, I liked them. The jamaica was a good representation, tasty and a generous amount.
The truck still has some of the drawbacks of the previous ones. They did not have the papas al horno listed on the truck. They list desserts now, and while I didn't order one there is evidence that they have them. There is no real menu and prices are not displayed. But service was friendly and reasonably fast. I liked my food better than last time, it seems they are headed in the right direction.
